Taste Story

This washed lot is zippy and sweet. Citrus sweetness and vibrancy greet you up front, think of tangerines and clementines. Dark fruit vibes such as cherry and plum pop in the background providing pleasing depth to the cup. A general sweetness is found from start to finish that some may experience as marshmallow, nougat or even caramel. This humble lot offers great flavor sensations from start to finish for your brewing adventures. 

Processing Journey

Ripe coffee cherries are inspected for defective cherries, and then depupled. Following the depulping and rinsing process the coffee is transferred to canopy-covered solar drying beds for 18-24 days. The coffee is routinely raked and rotated for even exposure and drying. Finally, the coffee rests for 15 days in sealed bags. Vergara and Lasso use solar dryers because they protect the coffee while using natural solar energy.

Acclaimed producers Jhoan Vergara and Nestor Lasso have teamed up to showcase the simple beauty of coffee from their home region. Peñas Blancas is a project dear to both of them because it empowers local farmers to produce amazing coffee. They work with pre-selected smallholder farmers to ensure high quality. They aid these farmers with state-of-the-art processing, technical training and fair compensation. So this lot is about more than the cutting edge techniques Vergara and Lasso have become known for.
