This sweet, fruity and creamy lot comes from the mountains of the Chirripó region of Costa Rica. Orange brightness pops immediately in the cup. Then you’ll experience a sweet creaminess that will register as almond cookies or creamy nut butters for some. A fruity finish brings the cup alive.
What is Honey Processing?
Honey processing is named for the sticky mucilage that remains on the coffee cherry after pulping. This process imparts wonderful flavors but also helps conserve water. This particular lot is a full honey, also known as black honey, meaning that all of the mucilage was left on the coffee cherry as it dried.
Farmer Profile
Ricardo Ureña Rojas is a fourth generation coffee producer honoring the timeless work of his great-grandfather Hilario Ureña . Since 1940 the Ureña family has been operating farms in the Brunca Region near theChirripó Mountain. The initial micro mill Cafe Rivense del Chirripó has blossomed into a collection of several farms. With their facilities also serving as micro mills for other coffee farmers in the region. Ricardo oversees this operation dutifully to ensure his family’s legacy lives on.
