Taste Story
This experimental natural process coffee sips remarkably delicately with tons of flavor clarity. Up front you get berry forward sweetness. Followed by a rush of citrus sensations like orange zest, and lemon candy. Floral sensations like honeysuckle and lavender make up the finish. This is a well rounded, and nuanced coffee to savor.
Double Layering
Natural processed coffees are typically sun dried in a single layer. At the behest of The Coffee Quest team Ture Waji’s team dried a thicker 8 CM layer of coffee, meaning an extra layer of coffee was added to the drying bed. This was done to enhance the winey notes in naturally processed coffee. This double layering process increases on-bed fermentation and the risk of mold. However, Ture’s team is adept at caring for the coffee as it dries. The coffee was frequently checked, and hand rotated to ensure proper drying.
Farmer Profile
About 35 small lot farmers of Teraga and acclaimed coffee producer Ture Waji come together to showcase their dedication to beautiful coffee. This style of arrangement is common in Ethiopia as small lot farmers lack the resources to harvest and process large quantities of green coffee. Ture Waji started building drying stations around 2018, and is now known as the “King of Guji.” His rigorous processing techniques have set a standard for his region and the industry. His natural processed coffees are plenty flavorful and stunning in quality.
