Mexican Mountain Water Process

This decaf lot is decaffeinated using fresh spring water from Pico de Orizaba, the highest mountain in Mexico. Each batch of beans is steamed to create a green coffee extract, this extract is passed through a filter to remove the caffeine, and then reintroduced to the coffee. This process removes 99% of the caffeine, while retaining the natural complexity of the coffee.
