Processing Journey
The ripest cherries are picked by hardworking small farmers for processing at the Karengera Washing Station. The coffee cherries are floated to remove defective cherries, and then undergo a 12 hour fermentation period. The cherries are rinsed, and set on raised beds to dry in the sun. The cherries are hand rotated for even drying during this period.
