Taste Story

This wonderful natural lot from the Harsu Wekilo village in Ethiopia’s Guji Zone offers fruity, funky and floral sensations. Up front you get berry notes from freeze dried blueberries to a nicely tart raspberry. You’ll experience an abundance of floral aromas, and a touch of jasmine or lavender while sipping. A nice stone fruit sensation balances the cup for a nuanced drinking experience. 

Processing Journey

When the coffee cherries arrive at the processing station they are separated into 700 kilogram batches, and then laid on raising drying beds. The cherries typically dry for 18-21 days. During the first two days the cherries are hand rotated to promote even drying. This gives all of the cherries consistent exposure to sunlight and air. After the coffee is dried it takes a trip to another processing facility to have the dried cherry skin removed. 

Farmer Profile

Smallot farmers from the remote Haru Wekilo deliver their hand harvested coffee to the family run Tracon processing station. These smalllot farmers are the life force of Ethiopian coffee that has allowed roasters like us to bring amazing coffee to our local communities. Many of these farmers typically intercrop their coffee plants with other food crops to maximize land use, and to feed their families. Farming is a vital undertaking for these farmers that we honor with thoughtful roasting practices.
