Gunung Tikukur Dark Note - Indonesia
Gunung Tikukur Dark Note Series
Taste Story
Abundant sweetness defines this delicious coffee from the West Java region of Indonesia. It also has a pleasant crispness that will instantly remind you of biting in a green apple. It has a finish that is full of tea like flavors, our team experienced a nice jasmine tea sensation. A clean body and mouthfeel will keep you reaching for this wonderfully nuanced coffee.
Processing Journey
Upon arriving at the Tenjolaya Ciwidey processing plant the coffee cherries are sorted to remove the defective cherries. Only the ripest red cherries are selected for further processing. After sorting is complete the cherries are pulped before undergoing 16 hours of fermentation. After this fermentation period the cherries are rinsed, and then dried in solar dryers.
Farmer Profile
This tasty coffee is powered by the dedicated small holder farmers of the West Java region. They deliver their cherries to the Tenjolaya Ciwidey wet mill for processing. Due to the humid conditions drying coffee is hard for small farmers so this wet mill is a vital tool for the area. It allows farmers to put their best foot forward and gain access to larger audiences.
