Processing Journey
After a rigorous screening process to select the best cherries, they undergo 76 hours of anaerobic fermentation in sealed bags Tubes are placed in each bag to avoid CO2 buildups. Once washed, the coffee was dried in a greenhouse for 18-20 days.
