Taste Story
This washed lot from Ecuador is rich, sweet and layered. Immediately you experience fruity wine sensations akin to watermelon and strawberry. The finish has a touch of citrus, think lime zest or sweet clementine. As it cools you’ll experience pineapple vibrancy, but also sweet grape notes. A syrupy body holds together all of these wonderful flavor sensations.
Processing Journey
Small lot farmers float the coffee cherries to detect defective cherries. After this the cherries are fermented for around 24 hours, and are then depupled and dry fermented. Finally, the coffee is dried for 10-12 days depending on the weather conditions.The coffee is then transferred to for further processing and packaging.
Farmer Profile
This wonderful lot is named for the Quilanga, Loja town known as El Sauce. It’s one of the old coffee growing regions in Ecuador. This lot represents the best of the many small farms in the region. These farmers have adapted to a variety of changes, but have continued to produce amazing coffees. Communal lots like this one allow small farmers the opportunity to have their coffees showcased. Many of these farmers go on to cultivate beautiful micro lots.
