Taste Story

This fruity, sweet and lightly tart natural lot from Honduras is a treat to drink. It has a nice medium body that sips smoothly. It opens with a heavy red fruit sensation, think apples, cherries and plums. As it cools you’ll experience tropical fruits like mango, papaya and melon. Many might be reminded of eating a buttery graham cracker crust of your favorite cheesecake or tart. You’ll also find a pleasant tartness, reminiscent of hibiscus. You’ll find a lot to love about this beautiful lot from Mario Meija.

Processing Journey

Handpicked cherries are placed in bags for 12 hours for a spontaneous anaerobic environment. The cherries are transferred to raised drying beds. Thin layers of coffee cherries are raked every 20-30 minutes to ensure even drying. After four days, thicker layers of cherries are raked every hour. The cherries typically need around 15-22 days to completely dry, depending on the weather. 

Farmer Profile

Mario Meija is an agronomist and fourth generation coffee grower, he took over for his dad at the age of 26. Currently he manages around 100,000 coffee trees on about 80 acres of land. Mario grows a wide range of varietals, from Pacamara to Gesha. In 2023 he opened a wet mill on the farm, offering the service to local farmers.
