Shantawene - Ethiopia
Shantawene
Taste Story
This washed process Ethiopian coffee sips easily with its light mouthfeel. However, it is full of fruity sweet flavors like peach and papaya. In the finish you’ll find a nice floral honey sensation that will feel like sniffing lavender or honeysuckle. This traditionally washed Ethiopian coffee will keep you happy.
Processing Journey
The coffee cherries undergo an initial floating process to remove defective cherries. After this they undergo an underwater fermentation process for 48 to 72 hours. After this the cherries are depulped and dried on raised beds for 11 days. During the initial drying process the coffee is rotated consistently to promote even drying.
Farmer Profile
The coffee is grown and harvested by numerous small farmers of the Shantawene region. We greatly appreciate their efforts as the most vital link in the specialty coffee industry. We always strive to honor their efforts with thoughtful roasting profiles that showcase the innate beauty of their coffees.
