Taste Story
Tropical sweetness pops out in this silky Catiope lot from Colombia. Passion fruit and papaya sensations are most notable, but you’ll also pick up sweet melon. A little further into the sip you’ll get black cherry & mixed berries. If you have ever tried a packet of Welch’s berries & cherries gummies you’ll be in heaven. As it cools you’ll have a pleasant burst of warmth in the finish. For some it’ll be a spice like ginger. Others might get a lemongrass vibe. This one of a kind lot offers big flavors to enjoy in a clean sipping package.
A Special Varietal & Unique Processing Journey
Catiope is a first generation hybrid of the Colombian variety Caturra, and an Ethiopian Landrace known as ET41. This special varietal was made possible by the French research CIRAD, the central American network PROMECAFE and CATIE. The name “Catiope” pays respect to its heritage; “Cat(urra) and (e)TIOPE.
This unique varietal undergoes an adaptation of anaerobic processing invented by Andres Quinceno, one of the producers of this lot. The coffee cherries are put through different metabolic stages to produce bold flavors. Ripe cherries are subjected to stress so that their temperature rises and falls to 12 degrees. After pulping the beans go into a bioreactor with starter cultures, and mashed passion fruit juice mossto. While in the nitrogen sealed bioreactors the temperature, acidity and Brix degrees are closely monitored to perfectly time the fermentation stage and initiate oxidation.
After leaving the bioreactor the coffee beans are dried in solar dryers to 40% moisture and then transferred to mechanical dryers until they reach 10-12% moisture. The coffee then rests for 45 days before being prepared for export.

The team of Julio Madrid & Andres Quinceno have become a force in the specialty coffee industry. Their experiments have inspired the rest of the industry to tinker with processing methods to produce bold and unique flavors. Located in the foothills of the Andes Mountains Finca Milan’s soil is enriched with nutrients from nearby volcanoes. The wide range of temperatures in the region help to produce complex and unique flavors. Julio Madrid is a third-generation coffee grower. Finca Milan has been in his family for over 40 years. Andres Quinceno is a processing specialist with endless curiosity. The team is changing the coffee industry, and we’re thankful to share their hard work with you.
