Taste Story
This full bodied coffee is full of rich chocolate, and caramelized flavors. Toasted nut sensations will find your taste buds easily. We experienced this primarily as pecan, but it might also remind you of almond or cashew. You’ll find a hint of jammy fruitness in the finish for a balanced drinking experience. Drinking this tasty coffee reminded us why we started our now beloved Dark Note series.
Processing Journey
Wet hulling is a washed process devised in Sumatra as a solution to the rainy and humid conditions that make drying coffee tough. Typically fresh cherries are depulped, fermented overnight, washed but only partially dried. The husk is removed while the coffee is still soft and pliable; much earlier than usual. Once delivered to a mill the coffee is dried completely.

This delightful coffee is made possible by the dedicated small holder farmers of the Bajawa region. Expert coffee curator Hendrikus Radko. He chooses the best lots for further processing. Due to the humid conditions drying coffee is hard for small farmers so he’s a vital link for the area.
