Processing Journey
Being a curated lot, drying times vary from 15-25 days on average due to climate and drying equipment on each farm. Some farmers prefer to sun dry on their patios, and others prefer to use solar drying machines. This variance means each lot needs to be tasted at various points to ensure it has the desired flavor components to be included in the lot.
