This light, tart and juicy pink bourbon lot from Nestor & Adrian Lasso out of Colombia is an exclusive from their wildly successful El Diviso farm. It opens juicy and bright, reminiscent of a refreshing pink lemonade. Its soft body comes with floral sensations. Think of a nice marmalade or wildflower honey. Processing Journey
This lot can be thought of as a hybrid washed coffee as it begins as a double anaerobic natural before being washed. Put simply, the coffee undergoes two fermentation periods, an initial 20 hour period in sealed barrels and then an 18 hour period with coffee cherry juice. Finally, the coffee cherries are soaked with water and coffee cherry juice, for 18 hours after they have been depupled. The coffee is then transferred to solar drying beds for 18-24 days. The coffee is routinely raked and rotated to ensure even exposure and drying. The coffee then rests in sealed GrainPro bags for an additional 15 days.
Farmer Profile
Nestor and Adrian Lasso, 28 and 27 respectively, are darlings of the specialty coffee industry. After their anaerobic natural Sidra was used to win the World Barista Championship their coffees have become staples of the competition circuit. When Nestor finished high school he started working alongside their father on the family farm, but with two big goals in mind. Nestor vowed to never compromise on quality and to do things radically different than what was traditionally accepted in Colombia. These goals have driven him to heights he never expected. At 28 he leads his family's farm and inspires farmers all across the world to try things never seen before.
