This is a beautiful example of why we love washed Ethiopia coffees so much.
A word on fermentation and washed process. With the virility of anaerobic coffee its tough sometimes for a simple washed coffee to shine. Thats a huge bummer to this washed coffee loving production staff. The interesting thing is that fermentation is kinda part of every process. For example, this wash Hamasho is wet fermented for between 36 and 72 hours, and then dried on African beds for about 12 to 15 days, until the coffee reaches approximately 10% moisture. Fermented just right. Balanced, nuanced and clean (not too funky).
