Hailing from the mountainous region of Lempira, Honduras, where numerous springs carry nutrient-rich minerals to various areas within the forest, this catuai varietal boasts a unique quality. This offering is produced at the Congolon farm, where an altitude of 1750 masl requires the employment of steady and reliable drying conditions. These important practices, exemplified by a passion for coffee that farmer Jose Claudio Perez Amaya inherited from his father, allow for carefully considered production in an area prone to “freezing”. Although this production region has its tribulations, the low temperatures and abundant rainfall create a unique atmosphere for a unique cup.
