The oldest trees at the farm of La Folie are 40 years old, supported by the nutrient-rich soil of clay mixed with volcanic and sandy loam. The longevity of this farm is made possible through the re-planting, pruning, and processing that have been successfully introduced by the management team. Meaningful and lasting relationships have also been established between farm and workers to provide benefits that weren’t previously accessible, from healthcare to management knowledge. Supported from the foundation of its workers, La Folie is able to produce an offering of bourbon and caturra varietals that are carefully fermented for 15 hours and patio dried for 14 days to offer an exceptional cup.
